Two day Charcuterie Classes at Martins Ridge Farm in Conjola. This farm is all about sustainability, chemical free and holistic management. A family run farm, Ian Martin will facilitate the two days and you will walk away with a new skill set and a range of products you have created, so plan the gathering now! We start with a whole pig, learn how to butcher then make - a range of sausages, salami, Guanciale (cured cheek, bacon, pancetta, cured neck (Coppa), proscuitto, lard and lots of other yummy pig things.
